Avocado

Avocado is usually very expensive, however I found a great deal at Aldi a few weeks ago-- 25 cents each!!! I was excited! I decided to trying freezing some, because we surely could not eat 10 of them! I used a hand mixer to mush up avocado with a very generous amount of lime juice. I froze it in the freezer and pulled it out today for guacamole. It came out of the freezer a beautiful green, not brown like avocado can easily turn. I just added some fresh garlic and we had some quick, inexpensive guacamole for lunch!
