Chicken Tacos

Recently we have been trying to be intentional about inviting other families to our home for dinner. The children love having friends over and it can be encouraging to us and the people we invite for fellowship. It's not always easy when you are raising a family to do much outside of the home or to reach out to other people. However, by faith in God I want to choose to serve other people and to practice hospitality toward others.

I've decided that preparing fancy meals for guests is completely overwhelming for me and we just need to serve something kid-friendly, budget-friendly and easy to make. Tacos are now what I serve every time we invite guests for dinner. One variation that has turned out to be the very easiest to prepare are chicken tacos. I throw in a bunch of chicken breasts in the crock pot and pour a jar of salsa on top. Cook on low for 3.5 hours. Once cooked and tender, shred up the chicken and mix around in the salsa. This makes great tacos! I provide toppings of cilantro, chopped onions, sour cream, shredded cheddar cheese, and salsa. Add a variety of soft tacos, hard shells, and tortilla chips and you've got a feast that anyone can find something they like to eat!
