Baked Oatmeal

This is our absolute favorite breakfast meal-- Baked Oatmeal. It is economical, tasty and very healthy. It also heats up well as leftovers, which is good for my husband who leaves for work before I wake up :)

Bring 8 cups of water to boil
Add 4 cups of old fashioned oats
Boil for about 10 minutes, stirring often
Add chopped apples (I usually use about 4 small Gala)
Add chopped nuts (walnuts, pecans, almonds, etc)
Add raisins or cranberries
Add cinnamon or pumpkin pie spices

Pour oatmeal mixture into a 9x13 baking dish. I pour some milk over the top of the oatmeal. Place in a 350 degree oven for 20-30 minutes. Serve warm and enjoy!

Note: You can add butter and brown sugar to this, but I never do. I find that the apples and raisins sweeten the oatmeal to our liking and I never taste a difference when there is butter in the recipe.
